The quality of food hygiene is directly related to people's physical fitness and life safety.

Factors affecting the quality of food hygiene include production raw materials and auxiliary materials, production technology and production environment. The food production environment includes equipment (tools), personnel, and air that may come in contact with food. The purpose of safe production control is to prevent food from being processed under unhygienic conditions. Pollution control in clean rooms (areas) for food production is a key link in food production environmental control, and its control objects include dust particles and microorganisms.

Microorganisms in the air are ubiquitous and often adhere to dust particles, which spread with dust, mist droplets, dander, hair, etc. The more dust particles in the air, the greater the chance that bacteria will attach to the dust particles, and the chance of spreading will increase. Similarly, viruses can attach to dust particles and spread. Therefore, controlling the number of dust particles in the air can control the microorganisms attached to it.

Most microorganisms are 0.3 μm. Virus is the smallest microorganism, above 0.005? M, followed by Rickettsia. There are many types of bacteria, most of which exist in colonies in the air. Common bacteria are 5.5-6.5 μm in size and fungi 3.1-3.9 μm. They can be basically removed by using high-efficiency air filters (0.5 μm, filtration efficiency ≥99.9%).

Air cleanliness refers to the degree to which the air contains suspended particles in a clean environment. Generally, the higher the dust concentration in the air, the lower the air cleanliness, and the lower the dust concentration, the higher the air cleanliness. According to the concentration of suspended particles in the air to divide the air cleanliness level in the clean room and related controlled environment, it is to determine the air cleanliness level by the maximum allowable number of particles per cubic meter of air. The cleanliness levels of suspended particles in the air in clean rooms (areas) specified in the national standard GB50073-2001 are shown in Table 1-2.

Compared with the original standard GBJ73-84, the air cleanliness level has been increased from 4 levels to 9 levels, and the particle size of the control particles has been increased from 2 (0.5? M and 5? M) to 6 (0.1? M, 0.2? m, 0.3? m, 0.5? m, 1? m, and 5? m), and the air cleanliness level allows the use of intermediate levels between integers, such as 1.0, 1.1, 1.2 ... 8.9, 9.0.
